The flavorful cuisine comes from the Mayans, the East Indian population, the Garifuna people, the Mestizo (Spanish decendents), the Chinese immigrants, and the Creolé. Think coconut, beans & rice, stewed meats, savory soups, chocolate, plaintains, yucca, fry bread, mangoes, rum, seafood, conch ceviches, achiote paste, hot sauce and more!
This special evening celebrates the vibrant heritage of the communities Hillside Health serves while raising critical funds to provide free healthcare to families in Southern Belize. Every ticket purchased helps Hillside deliver life-saving medical care, medications, and outreach to remote villages—ensuring that no one is left behind. Strega Rachael had the opportunity to travel in Belize years ago, and she's sharing both her memories as well as ideas and recipes shared by Rachael Prusi from her many visits in Belize helping out with this organization. We are so excited to collaborate on this multi-course dinner experience!

Hillside Health Care (www.hillsidebelize.org) is transforming lives in Southern Belize by delivering free, high-quality medical care to communities that would otherwise go without. Since its founding in 2000, Hillside has grown from a small clinic into a lifeline for thousands, providing year-round services through its clinic, home health program, and mobile outreach to remote villages. Every year, Hillside delivers over 10,000 essential health services—treating chronic conditions, supporting families with palliative care, and offering rehabilitation for those with disabilities—all at no cost to patients.
Hillside Health Care has been serving the Toledo District of Southern Belize since 2000. Originally founded as Jericho Road Clinic, the organization evolved into Hillside Health Care International in 2005 and became Hillside Health Care in 2024. Its mission is to address unmet medical needs through a year-round clinic, home health visits, and mobile clinics that reach remote villages. Hillside offers specialized programs such as palliative care, hospice services, and community-based rehabilitation, while also focusing on public health education for children and adults.
Each year, Hillside delivers approximately 10,000 clinical and outreach services, treating conditions ranging from diabetes and hypertension to disabilities across all age groups. The organization partners with local leaders, government ministries, and NGOs, and integrates volunteer healthcare professionals and students into its interdisciplinary care model. Beyond clinical work, Hillside is deeply committed to community engagement through health fairs, disability awareness programs, and training for community health workers, fostering sustainable healthcare and cultural competence in one of Belize’s most diverse regions.
